Explosive tropical fruit and ripe berry, layered with a wine-like complexity and a long, syrupy finish. Wush Wush is one of Ethiopia's rarest and most prized varietals, and this lot comes from farmers working at extreme elevations in the Gedeo Zone, where the terroir produces coffees of exceptional complexity. What sets this coffee apart is its 120-hour extended dry fermentation. Only the ripest cherries are selectively hand-picked, then sealed in Sandbags fermentation lasting five full days before moving to raised drying beds. This extended process brings out the fruit-forward intensity and wine-like depth that Wush Wush is celebrated for. 350 member farmers have committed themselves to preserving and propagating this rare varietal. Many of their trees are more than 50 years old — lower in yield, but remarkable in the cup. Our partnership began in 2019, when we first cupped a sample that scored above 88 points.
