This year we're sourcing coffee from the Mora Durán family in Costa Rica to create our holiday coffee "Silver & Gold". Placeres del Llano micromill is located in the Tarrazú region of Costa Rica in the Leon Cortes, San José province. The project was founded in 2020 by the Mora Durán family with a goal to produce high quality coffee and serve as an example of honest, hard work of the region’s coffeelands.
This lot of Caturra and Catuai coffee underwent Red Honey processing. Cherries were harvested with a measurement of 24 degrees Brix to ensure optimal ripeness. The harvested cherries were then pulped and moved to raised beds for drying. The pulped coffee was moved every half hour during the daytime, and covered at night to protect the coffee from moisture. Coffee was dried 18–22 days to reach 9.8–10.1% humidity. Dried coffee was finally rested in GrainPro for one month prior to being prepared for export.
